When someone cancels a dining ressie does the system automatically reflect this or does it reset all at once at a specific time? Like at midnight? The following morning etc?

When does the ADR system show open (cancelled) time slots?

Guessing - but I would say that the reservation becomes available immediately - just as a reservation made blocks a table immediately :shrug:

It does show up immediately. I made a mistake when making a reservation but did not notice it right away. I forgot to choose how many people for my ressie and it defaulted to 1 person. When I noticed, I tried to find an opening for 2 and there was nothing. Although I figured there are no tables for 1, I wanted the reservation to be right. I took a chance and cancelled and immediately went back to rebook and there was an available for 2. Luckily nobody got to it before me!
