A Question on the gift cards?

Are you talking about a gift card that you receive as part of a promotional package? If that's the case, then the answer is NO, you can't use that gift card to pay for the Disney Dining Plan.
You have to book the Disney Dining Plan before you check-in ... I can't recall the exact amount of time, but it's somewhere in the range of 2-5 days within check-in day. Believe it or not, Disney won't take your money if you show up on check-in day and request to add the DDP to your reservation.
When you add anything to a package (or convert a room-only reservation to a package) less than 45 days prior to arrival, any charges for those changes are due IMMEDIATELY.
And since you won't receive that gift card until your are there checking-in, it will be too late to pay for the DDP at that time. Make sense?
