1st trip to Disneyland During the Holidays

We're planning our first trip to Disneyland Dec 20-22 2011... what is a MUST to do while we are there? Are there specific holiday events/things that we should not miss? Also, I'm the kinda girl that firmly believes any trip to Disney World should be a minimum of 7 days, so with this in mind, will 2-3 days be enough time at DL? :shrug:
