If its the last day of their trip and they had a multi-day ticket (say 7 days), the difference of the extra day is less than $20 isn't it? I'd say that's worth it for 6.5hr more in the parks!

Availability for dining can pop up randomly (as others change their plans). If you are concerned about cutting it close for Merriest Celebration then keep checking Disney's site for an earlier booking. You can also try touring plans reservation finder to help you.

I was in WDW last August and booked the trip somewhat last minute. I looked for a Be Our Guest reservation for one of my 2 MK days but there was no availability. I kept looking and ended up finding an ADR 29 days before my trip. If it's worth the effort for you I would recommend not giving up!
